1 egg; 1 scoop of vanilla protein powder ( I use SunWarrior as it’s organic, gluten/dairy/soy free and raw); 1 tsp gluten free baking powder ( I use Doves); 50g of Teff/Coconut Flour/Gluten free flour; 50ml coconut or almond milk; 1 banana

For the topping: fresh fruit/nuts/seeds of your choice:

Combine the pancake mix ingredients into a blender and whizz until smooth.

Heat a pan with coconut oil.

Use a ladle to spoon the batter mix into the heated pan.  A ladle is everything, I tried without and it was messy!

Cook until small bubbles appear on the            surface and then flip away and cook on the other side.

Plate up and go again to get a stack.

Add your choice of toppings and enjoy.

WHY TEFF FLOUR?                                     Teff is a gluten free grain, rich in calcium, iron, copper, manganese, vitamin C (not usually found in grains) and protein. With these health benefits I like to try use it in cooking often.
